The Nc’nean Organic Single Malt Whisky starts as a slow fermentation of 65-120 hrs. This longer than normal ferment encourages ester formation and more complexity in the wash, giving more character to the spirit. Bespoke ‘lantern shaped’ stills with constricted necks (encouraging reflux) produce a light, elegant spirit.

The final step in the process is the maturation, in this case a majority ex-bourbon plus STR (shaved, toasted, re-charred) red-wine casks plus a small number of ex-sherry casks. Bottled at 46% abv in 100% recycled glass (but of course!) – and the bottle itself is definitely worth a quick mention – it’s absolutely beautiful!

Nc’nean’s founding purpose was unusually clear: create world-class whisky with the smallest possible environmental footprint. This wasn’t an afterthought or a later pivot – it was the blueprint from day one. The distillery was designed around renewable energy, organic agriculture, and circular resource use.

A few headline achievements illustrate the depth of their commitment:

  • First UK distillery to achieve verified net-zero carbon emissions (Scopes 1 & 2), achieved in 2021 – twenty years ahead of the Scotch Whisky Association’s industry-wide target.
  • 100% renewable energy powers the distillery, including a biomass boiler fuelled by local woodchip.
  • 100% organic Scottish barley, grown without synthetic fertilisers or pesticides, improving soil health and biodiversity.
  • 100% recycled glass bottles, the first in the UK spirits industry to adopt “wild glass” as standard.
  • 99.97% of waste recycled, with draff fed to local cattle and pot ale used as fertiliser.

This is not ‘greenwashing’. These are audited, measurable, structural commitments that place Nc’nean at the forefront of sustainable distilling worldwide.

The distillery’s location is no accident, either. Nc’nean sits on the Drimnin Estate, overlooking the Sound of Mull – a remote, rugged, ecologically rich corner of the Highlands. The isolation is part of the charm, but it also shapes the whisky.The estate provides pure spring water, used throughout production. A natural cooling pond enables a closed-loop cooling system circumventing the need for energy-intensive chillers. The boiler is heated by sustainable biomass fuel sourced locally to minimise transport and support circular land management.

The environment is not just a backdrop; it is an active ingredient in Nc’nean’s identity.

OUR TASTING NOTES

Nose: The wildflowers on the bottle give a pretty good visual indication of the nose – light meadowy floral notes, herbaceous, grassy wafts, there’s also a light drizzle of honey with a sprinkle of candied peel going on there too.

Palate: A lot more viscous than the light nose suggests, with a burst of pepper strait up (there’s those sherry casks!) but a luscious salty-fruitiness bursts through – that, frankly, captivates me. A bit salty-plum, a bit jammy, a bit lemon drizzle-ey a bit salted lemon (lemoun mrakad – that Moroccan condiment) – it’s intriguing. There’s honey, vanilla, and malt biscuits in the mix too.

Finish: Medium length, sweet, fruity finish with an underlying warm vanilla creaminess that is very satisfying to chew on.

This is a delightfully moorish whisky for those who like it fruity and floral. It’s citrusy lift, soft sweetness, and gentle spice don’t shout for attention; they unfold with an easy elegance that rewards a slow sip and a moment’s pause. An easy introduction to our passion for a newbie, but enough complexity to wax lyrical with a fellow whisky geek for at least half a bottle. This is the first Nc’nean whisky I’ve tasted, and I sincerely look forward to trying more of their range.

Elegant and fruity, our flagship whisky is easy-going and delicious however you drink it, with flavours of citrus, peach, apricot and spice. We find we can taste lemon posset, peach & apricot and spiced rye bread.

Our whisky is unpeated and is made from organic Scottish barley whose natural yields and rich soils contribute depth of flavour. Our gentle fermentation and distillation accentuate the delicate, fruity flavours in the spirit. Matured in specially treated red wine and Bourbon barrels, alongside a small amount of sherry casks, to develop our spirit’s signature body and sweetness.

Our whisky makes a big impression with the smallest footprint. Every bottle is certified organic, made in our verified net zero distillery (scopes 1 and 2) and bottled in a 100% recycled glass bottle.
