Every now and then a whisky lands on our desk that makes us stop what we’re doing, pour a dram, and immediately start guarding the bottle from everyone else. This month’s Members Extra is exactly that whisky.

Introducing GlenAllachie 11 Year Old Palo Cortado – an 11yo Speyside single malt matured in ex-bourbon casks before receiving a finish in some of the rarest sherry casks in the world: Palo Cortado. Better yet, SMWC members are the very first in Australia to get their hands on it.

Palo Cortado is the unicorn of the sherry world.

It’s one of the rarest styles of sherry produced, combining the elegance of lighter sherries with the richness and depth of darker styles. Very few casks are available for whisky maturation, which is exactly why we needed to try this one!

When those rare casks meet the honeyed, fruit-forward spirit of GlenAllachie, magic happens. Expect layer upon layer of rich fruit, chocolate, spice and nutty goodness, all wrapped up in a beautifully balanced Speyside single malt.

Palo Cortado, traditionally produced in the Jerez region of southern Spain is one of the rarest sherries with maturation process that sets it apart form other sherries. It begins as a dry white wine made from Palomino grapes, which is initially fortified to around 15% alcohol. This allows a natural layer of yeast, known as flor, to develop on the wine’s surface, protecting it from oxygen and creating delicate, fresh and aromatic characteristics.

The interesting twist comes when selected barrels are fortified again to above 17% alcohol, killing off the flor and allowing the wine to mature in contact with oxygen. This oxidative ageing develops richer, deeper flavours and a nuttier character, combining the delicate elegance of an Amontillado with the richness of an Oloroso. The result is a remarkably complex sherry, with notes of toasted almonds, hazelnuts, dried fruit and spice.

Produced at GlenAllachie Distillery in Scotland’s Speyside region, the GlenAllachie 11YO Palo Cortado expression reflects master distiller Billy Walker’s passion for sherry cask maturation. Initially matured in American oak ex-bourbon barrels, the whisky then receives a secondary maturation in Palo Cortado sherry casks sourced from Cádiz in southern Spain. Palo Cortado is one of sherry’s rarest styles, bringing together the delicate character of biologically aged sherry with the richer, nuttier qualities of oxidative ageing.

Palo Cortado is the rarest style of Sherry, combining the aromatic finesse of Amontillado with the structure and richness of Oloroso. It develops when the ‘flor’ yeast layer naturally fades on a wine that was initially intended to become a Fino.

Using puncheons and hogshead casks that previously held this exceptional Sherry, the whisky develops a beautifully layered character, with notes of ripe plums, dark mocha and warming cinnamon spice.
