OUR TASTING NOTES
Nose: This one has a bigger nose than Klinger! (Am I dating myself with that reference?) Luscious and sweet, fruity and [biscuit] spicey, some petrichor and – yep there it is – the signature ‘Tin Shed Leather note’ somehow enriching it all and tying it all together.
Palate: Some pepper as expected, but it’s the dryness that surprises! As if it can’t quite make up its mind it becomes sweet, and then dry once more – all the while giving minced fruit, flaky pastry and coffee (both sweet and bitter evolving)
Finish: Whist it’s mostly dry (yet long) – there’s waves of sweetness that roll in, then ebb back into dryness. Interestingly too, I get a certain saltiness as it fades which mystifies me somewhat!
This is one of those whiskies you’re going to want to set some time aside when you crack it. You’ll definitely pour a second, third and… because you’ll want to taste that evolution from dry to sweet (and back), and those waves of salt that come through in the finish. I agree with Ian & Vics assessment that I tiny ‘bloop’ of water opens that sweetness up in the palate. It’s a complex, evolving and many layered whisky (or is it an onion, Donkey?) – you’ll know what I mean when I say –“ I hope you have a ‘whisky friend’ around when you crack it, because you’re going to want to talk about it with someone!”.

Every step of the process we employ is hands on; from milling the malt, stirring the mash, making the cut and moving the barrels, to judging which casks to use, bottling, labelling and shipping bottles of spirit to our clients and friends. True, we are more hands-on than some may consider necessary, but that is how we choose to make our spirits because we believe our way produces the depth of flavour we demand of our products.
In short, we simply would not do it any other way. Bringing our whisky, rum, vodka and gin to the market has been a real journey, that has tested our individual and collective spirit at every step! Palate: Spicey, dryish, then sweetness followed by more dryness. Sour plum and tobacco notes come in late after exposure to an incredibly complex and well-balanced integration that unfolds in your mouth.
Finish: Initially dry, followed by sweetness, more dryness and red raspberry lollies followed by confectionary notes in the home strait.
This dram benefits from a few drops of water that manifest themselves as a bombardment of flavour ricocheting around your mouth. It is a simple enough dram to provide a thoroughly enjoyable experience for novice drinker, or a challenging journey with ample rewards for the whisky nerds.
